The results of the proximate composition showed that the leaves of Rosemary had moisture content (7.50%), ash content (24.49%), lipid (29.52%), protein (15.00%), fiber (7.45%) and carbohydrate (16.04%) while bay leaves had moisture content (8.83%), ash content (12.00%), lipid (29.17%), protein (19.00%), fibre (7.00%), carbohydrate (24.00%) respectively. The phytochemical analysis showed that the Rosemary leaves and bay leaves contained tannin, Saponin and alkaloid. steroids were absent in the two leaves. The findings indicated that Rosemary and Bay leaves are potential sources of essential nutrient and phytochemicals.
