Abstract
This study Sensory Characteristics of Acha-Wheat Composite Flour Meat Pie, was aimed at seeking the characteristics of composite flour in the production of meat-pie. The study led to the rediscovery of Acha-wheat and to an increase in the use of whole flour in the food industry. This study is limited to the Sensory Characteristics of Acha-Wheat[Digitaria exilis] Composite flour Meatpie The study constituted 20 respondents who were the panelist. The study also made questionnaires to seek answers from the respondents. The study used the 9-point Hedonic scale to get the mean of the responses from the respondents. The study showed that all the products made were widely accepted by the respondents and the researcher further recommended that that Acha composite flour can be used to produce snacks to create awareness, increase the availability of cheap healthy products and create an alternative product....
