In developing countries like Nigeria, many food crops have been specifically grown for the production of bio-ethanol. However, bio-ethanol production from agricultural waste produce is very rare. The objective of this work is to compare the ethanol yield from cocoyam peel using Saccharomyces cerevisiae. The ethanol yield when the hydrolysates were fermented with Saccharomyces cerevisiae was 175cm3 (35%). High yield of ethanol from cocoyam peel shows high starch content, low protein content, and low fiber.
