Assessment of some minerals vitamins and purity level of some locally sourced edible oils sold in Sabon Gari market, Kano

Abstract
This study assessed the mineral composition, vitamin content, and purity levels of selected industrial and locally sourced edible oils commonly sold in Sabon Gari Market, Kano. The industrial oils examined were Mamador Oil and Kings Oil, while the locally produced oils included egusi oil (Citrullus lanatus/Citrullus lanatus subsp. mucosospermus) and sesame oil (Sesamum indicum). Laboratory analyses were conducted to determine the levels of fat-soluble vitamins (A, D, E, and K), selected minerals (calcium, magnesium, iron, and zinc), and physicochemical purity parameters such as iodine value, acid value, and saponification value. The results revealed variations in vitamin and mineral composition among the oil samples, influenced by processing methods and degree of refinement. Industrial oils generally showed better purity and stability, characterized by lower acid values and more consistent quality, while locally produced oils exhibited higher variability in nutrient content, likely due to traditional extraction techniques. Although edible oils were not major sources of minerals, trace amounts of essential minerals were detected in all samples. The study concludes that both industrial and locally sourced oils are generally suitable for consumption within acceptable quality limits; however, improved processing, fortification, and proper storage are necessary to enhance nutritional quality and ensure consumer safety....
