Abstract
This study assesses the microbiological status of traditionally prepared edible termites (Macrotermes bellicosis), a common protein source in various Nigerian communities. Despite their nutritional significance, concerns regarding food safety due to potential microbial contamination have emerged. Sample of the edible termites were collected and analyzed for microbial load, focusing on bacterial and fungal species present using standard microbiological methods. Total bacterial counts were determined through colony-forming unit (CFU) analysis, revealing significant levels of microorganisms, including pathogenic strains such as Bacillus cereus, Staphylococcus aureus and Micrococcus spp. Fungal contamination was also noted, with organisms like Mucor spp., Saccharomyces spp., Penicillium spp and Aspergillus niger identified. The findings highlight a notable presence of potential pathogens that pose risks to consumers, particularly concerning traditional preparation methods which may not adhere to modern hygiene standards. This study emphasizes the need for improved food safety practices within communities that prepare and consume edible insects. Recommendations include enhancing public awareness about safe handling and culinary procedures, alongside advocating for established guidelines regulating the processing of edible insects.
