Freshly fermented locust bean samples were subjected to sun drying, smoking, and oil preservation, after which microbial analyses were carried out using standard laboratory methods. The results showed that fresh locust beans had a high bacterial load of 3.6 × 105 CFU/g. Bacterial isolates identified included Bacillus subtilis, Escherichia coli, Staphylococcus aureus, Klebsiella spp., and Pseudomonas aeruginosa, while fungal isolates included Aspergillus spp., Rhizopus spp., Mucor spp., and Fusarium spp. Smoking was the most effective preservation method, reducing bacterial load to 2.0 × 105 CFU/g, followed by sun drying, while oil preservation showed little effect. The study concluded that locust beans are susceptible to microbial contamination due to poor handling and storage practices.
